I love this Severus. I believe he is cannon and in character and not AU. I believe in this type of situation Severus Snape's walls would crumble whether he wanted them to or not. All of his carefully built walls will have been breached unexpectantly.
Were Severus Snape ever to lose his heart to a woman whom he trusted returned his love and with whom he felt safe, I would expect him to be overwhelmed when he discovered the joy that had alluded him his entire life. And then he would find himself overcome with emotions he had been carefully protecting himself from; intending to suppress forever for his own survival. Once the dam was breached and his mask torn away, I would expect him to be completely and utterly overcome with emotion.
I also imagine Severus Snape is a man of extremes. He hates passionately and loves it passionately. He is not prone to ambivalence nor shades of grey when it comes to his temperament. Therefore, his intense emotional reaction to this situation would be reasonable
